Cooking Meat With the Caja China Roaster

Have you ever been to a back yard barbecue where there was an entire roasted pig on the table and wondered how the hosts got the pig, who cooked it and how?

Some cultures, Phillipino, Latin and even Indian cultures, are known for roasting whole pigs and other meat, and often what you may see them do is dig a whole in the yard and cook the pig or other meats wrapped in foil or on a rack over a bed of burning wood or charcoal. Pretty hard work, right?

Well, if you are a fan of roasted meats or have ever wondered how to roast a pig for a party or festival, the Caja China is exactly your kind of cooking tool because it is a essentially a professional quality pig roaster that comes in either aluminum or galvanized steel.

What’s the difference? Aluminum works and lasts for many years, you just need to keep it covered from rain or damp weather. Many retailers say the aluminum version is more durable than galvanized. But ultimately, it’s up to you to decide which version you like best, as they both function at the same level and produce the same type results.



The Caja China roaster can be used to cook different types of meat, including fish, ribs and foul, but many use it specifically for roasting a pig. So, how does it work? To begin with, many suggest that the best way to begin is to marinate or rub the pig down the night before wit salt or other spices. There are a variety of Caja spices on the market you can also buy to help add extra zing and tenderness to your meats.



It’s suggested that you keep your marinated pig (or other meats) in a large cooler overnight if you do not have enough room in your refrigerator. Another option is to put the pig or meat inside you Caja China roaster with ice bags over the top. Just be sure to let the meat return to room temperature about four hours before you start the roasting process.

When you are ready to roast your pig or other meats, just place them in the Caja China roasting box between the two stainless steel racks that come with your roaster. Your meat cooks using the heat from charcoal or wood placed on top of the pig roasting box on a stainless steel grill.

The racks are secured with four stainless steel hooks that hold the meat in place and make flipping the pig much easier.



Cooking times in caja china style Caja China roasters are going to vary depending on the size of the pig and the amount of charcoal used, but typically a roasted pig will be good to go in about four hours.



Don’t worry if it’s your first time roasting a whole pig. It may be time consuming at first and even a little bit on the messy side, but it’s not impossible to quickly get the hang of your roaster.
